|Watermelon, mint, and feta salad|
1 watermelon, preferably seedless
1 bunch of fresh mint
250gm feta, preferably goat milk feta
2 tablespoons of balsamic vinegar
Roughly chop the watermelon in to bite-sized pieces and place in a bowl. Roughly chop the mint and add it to the watermelon. Crumble in the feta and drizzle the balsamic over the top. Toss the salad until well combined and serve.
How easy is that? It is such a great salad! People are wary to try it at first as they see watermelon as a dessert food, but with enough gentle coercion they will be coming back for seconds and thirds. The goats cheese and balsamic provide a salty edge and the crunch of the watermelon and the freshness of the mint are uplifting and sweet.
