Leftover Christmas ham omelette

Every post Christmas period is punctuated by a billion meals involving ham. It can't be helped, I tell you! It's like you eat so much ham over the holiday season that you're set for the rest of the year and by the time Christmas rolls around again you're up for another ham marathon. Here's an awesome omelette recipe to help you dispose of some of those tasty leftovers.

Ham, capsicum, and feta omelette
INGREDIENTS
1/3 to 1/2 a cup of ham, chopped 
1/4 red capsicum, diced 
5 eggs
1/4 cup milk
30gm feta cheese
Salt and pepper to taste

METHOD
Add the eggs and milk to a bowl and whisk until well combined, season. Whack the ham and capsicum into a pan (or your handy omelette maker, we were lucky enough to get one for Christmas!) and lightly fry. Pour the egg mixture in with the ham and capsicum and crumble the feta over the top. Cook through. If you are using a pan you may like to either flip the omelette or put it under the grill for a few minutes to ensure that the top and bottom are both cooked without drying the whole thing out.

You can serve it on some nice toast, or if you are not organised and haven't remembered to buy bread before Christmas (that would be me...) then it is nice all by itself!
