|Tangy Green Salad|
1 cup baby spinach
5-6 large lettuce leaves, torn
1/4 cup snow peas, cut in to thirds
1/3 bunch coriander
1/2 a Lebanese cucumber, chopped chunky
1 granny smith apple, sliced finely
3 tablespoons of tahini
3 tablespoons water
Juice of 1 lemon
Salt and pepper
Whisk the tahini, water and lemon juice in a small bowl or shake together in a jar with a tight lid. Chuck all your green ingredients in to your salad bowl and add the dressing. Add salt and pepper, toss the salad to coat with the dressing, serve to your adoring fans.
This recipe makes about enough for a decent side-salad serving for two. If you wanted to make is even sweeter you could add some sultanas and if you wanted a bit more crunch you could chuck in some celery and it would be amazing. Do both! Go nuts.
